Caroline's Corner: 3 Recipes to Beat the Heat

Hydration can be a year-round challenge for all of us as we age, but summer, with hot weather and sun exposure, underscores the need to be mindful of fluid intake.  

Of course, we can drink more fluids, but we can also incorporate water packed fruits and vegetables into our summer fare to stay ahead of our fluid needs while enjoying some tasty new food combinations!  Here are three suggestions for recipes that add water and zip to summer dining.

Fruit Salsa with Bread Dippers

We’re substituting bread or unsalted crackers for the more traditional tortilla chips because the salt on the chips can outweigh the benefits from the salsa, but feel free to dip a lower salt chip!

Ingredients:

3 cups diced fruit (you could use mango, strawberry, or apple depending on your preference)

2/3 cup diced sweet red bell pepper
1/2 cup diced red onion
¼ cup fresh cilantro (packed)
¼ c lime juice
1T olive oil
2T chili powder

Instructions: Mix all ingredients and serve with your choice of dipper.

 

Avocado and Citrus Salad

Ingredients:

2 Haas avocados sliced
2 grapefruit or large oranges sectioned
Greens to form a bed on which to arrange the avocado and citrus

Instructions: Drizzle with olive oil and balsamic glaze.



A Really Peachy Salad

Ingredients:

3 cups Spring Mix Greens
1 cup baby spinach
1/4 cup fresh basil leaves 
1/4 cup red onion 
1/2 cup chopped pecans 
3 ripe peaches pitted and sliced into sections obite sized chunks 

Dressing: 

1/2 cup olive oil 
4T white balsamic vinegar
1T honey
1 teaspoon prepared Dijon mustard 
Seasonings and herbs to taste 

Instructions: Combine all ingredients and toss with dressing just prior to serving.
